Raw Chocolate Energy Bites

In the days leading up to my school trip to Boston I was baking up a storm. As you can probably imagine the food on school trips is a far stretch from gourmet, but for people with intolerances and specific diets, such as I, the food is practically non-existent. So, that is why my kitchen turned into a whirlwind of granola-making, nut toasting, recipe testing and vacuum sealing. It’s important when you have food intolerances to prepare for the worst (think being served solely a bowl of shredded lettuce while your friends chow down on wheat filled spaghetti noodles).  Continue reading “Raw Chocolate Energy Bites”

Whole Roasted Cauliflower with Lentil Salad

I am a lover of breakfast. That is a true and simple fact. It is hands down my favourite, and most creative, meal of the day. Naturally, because of my love for breakfast, I tend to lean mostly towards developing breakfast recipes and posting about my breakfasts. The truth is my other meals are just as good as my breakfasts, but for whatever reason I am either too lazy to write down the recipes or to photograph the finished product therefore resulting in no new lunch and dinner posts. I have decided that that should change. It is now my mission to bring to you more main course styled recipes to satisfy all the dinner lovers out there. Sweet Potato Toast Two Ways

Last night was wild! It was my senior prom and, well, it definitely din’t disappoint. After a long night of dancing, talking and just straight up fun it’s always nice to wake up and cook up a big feel good style breakfast. (Think eggs, hash browns, grease lol). This morning I took a healthier approach to your typical diner style breakfast by topping thinly sliced sweet potato with avocado, poached eggs, nut butter and cinnamon. Morning Toast Three Ways

Sometimes I find that it’s best to keep things simple. I’m a big time planner when it comes to food; I always try to plan out each meal ahead of time to make my life a little easier. Most of my Sunday mornings are spent at the kitchen table flipping through cookbook after cookbook to decide what I want to have on hand and eat over the course of the upcoming week. Based off of my decisions, I compile a list of ingredients to stock up on. In my mind this is a wonderful system, but my family seems to find it bizarre and unrealistic (I beg to differ). Meal planning is a great way to reduce food waste and to prevent that dreadful moment where you open your empty fridge with a rumbling stomach and a lack of ideas. Quick Brussels Sprout Slaw

There’s nothing I love more than a good brussels sprout recipe. Seriously though, brussels sprouts are so versatile; you can use them in salads and pastas, you can oats them, shred them, boil them. The possibilities are endless!  Continue reading “Quick Brussels Sprout Slaw”

Chocolate Chunk Banana Bread

After months upon months of stress an, seemingly, never ending work, I am finally free. Last Monday I went for my final university interview and am so relived! Being a senior in high school is hard enough, but when you add in extracurricular activities, work and applications it becomes exhausting. I may have my applications done, but I do still have three more months of school to get through.  Continue reading “Chocolate Chunk Banana Bread”

Ultimate Mac n’ Cheese

A few months back I had a wonderful idea. I was testing out a vegan moussaka recipe from one of my all-time favourite cookbooks, Green Kitchen Travelsand as I was whisking the vegan béchamel sauce I had a wonderful thought. Since I am a fairly busy person, I have Continue reading “Ultimate Mac n’ Cheese”

Mashed Butternut Squash with Maple Pecans

I truly love Thanksgiving, funny enough I was actually born on Thanksgiving. It’s really lovely to sit down with family for a big meal in which everyone has made a contribution. I personally think that Thanksgiving is a close second to christmas, there’s the same feel in the air, the feeling of coziness and warmth.  Continue reading “Mashed Butternut Squash with Maple Pecans”

Blueberry Breakfast Smoothie

I really enjoy the convenience of being able to wake up in the morning and have my breakfast ready for me. Whenever I make a smoothie for breakfast I prepare it the evening prior to when I’ll be consuming it. I do this so a) I can just “grab and go” in the morning, and b) I won’t be that jerk who runs the blender at 7am. Continue reading “Blueberry Breakfast Smoothie”
