Vanilla Chia Pudding

IMG_8729Chia pudding is one of my go-to breakfasts because 1. it’s super easy to make and 2. it’s delicious. I love being able to mix together the ingredients and throw them in the fridge before bed then wake up in the morning and have breakfast waiting for me in the fridge, it’s incredibly convenient. Another thing that I love about chia pudding is how versatile it can be. Really, you can add whatever your heart desires to it. The recipe that I am sharing here is a very minimalist version of chia pudding, so feel free to tweak it and add your own spin to it.

Vanilla Chia Pudding

Serves 1

2 tablespoons chia seeds

1/2 cup almond milk (or milk of choice)

1/2 teaspoon vanilla

2 teaspoons pure maple syrup

Pinch of sea salt

fresh fruit

 

  • In a jar or small bowl combine all the ingredients (except fruit) and stir well. Move to the fridge and after about 15 minutes stir again. Return to the fridge.
  • The next morning give the pudding a good stir and top with fresh seasonal fruit, I used a nectarine and a plum.
